look: a recipe! breakfast bars.




I don't share recipes or DIY's very often because I don't usually cook cool things or DIY anything. And that's real. Jeff is the cook in this relationship and he's really good at it. I just pretend like I'm helping and do whatever he says. As for DIY, that's a whole difference story that I'll save for another day.


My mom makes these breakfast bars that I love and the kind mother that she is, suggested I make them this time. They were so easy {and yes my mom supervised to make sure I got it right}. We used Nigella Lawson's recipe seen here. {The second link is the Americanized recipe we used, adapted from her British recipe}.

Ingredients:

1 can (14 ounces) non-fat sweetened condensed milk
2-1/2 cups old-fashioned rolled oats (not instant)
1 cup shredded coconut
1 cup dried cranberries
1 cup mixed seeds (pumpkin, sunflower, sesame) (<-- I didn't have these so I added white chocolate chips and sliced almonds, good switch right?)
1 cup natural unsalted peanuts (I also added cashews)

Instructions

Preheat oven to 250 F degrees

Coat a 9x13 baking pan with nonstick cooking spray

In a large bowl mix together the oats, coconut, cranberries, seeds, peanuts, and any other ingredients you want to add

Take a photo of your lovely looking seeds etc.

Warm the condensed milk in a pan or in the microwave (30-45 seconds should be enough)

Add the warmed sweetened condensed milk and stir until everything is well mixed and coated with the milk

Spread the mixture into the prepared baking pan and press down with a spatula or your lightly greased hands, to even out the surface

Bake for 1 hour

Remove from the oven and cool for 15 minutes

Cut into 24 bars and let them cool completely

Store in a covered container.

The 2012

































The past year was an amazing one. 
Highlights include; starting off with a fabulous NYE, an extra special birthday party, Jeff graduated from graduate school, I graduated from undergrad, my sister graduated from high school, my brother got married, Jeff proposed, I worked at summer camp for the last time, took a few trips, joined the Portland Blogger network, collaborated with other Portland Bloggers on photo shoots, made new friends, connected with old friends, started the wedding planning, started a job, and blogged all the way through it. 

Thanks to everyone for following along and I am looking forward to what the new year brings!

The Color Run

The Color Run was awesome. It was so packed, we walked the whole thing {5k}, which was great because we liked going through the color stations really slow, rolling on the ground, and then throwing it on each other to get more color. Everyone got one free color packet and I really would have liked about 10 packets. 

this just made me want to go the festival of colors in Utah even more. it's similar but no running.

Happy 1st Blog Birthday!



I started this little blog a year ago Saturday!
It's been a fabulous way for me to stay creative, meet amazing new people, connect with family and friends across the country, and to find new inspiration everywhere.
Thank you to everyone who has helped me, supported me, encouraged me, and thank you to those who have read the blog whether it's once or everyday, thank you!

I'm excited to see where the next year takes me!

 Jeff made it just in time for the ceremony! He jetted over to Utah after being the best man in his brother's wedding the day before! Busy weekend.. so glad he made it to Utah.
